Chicken Broccoli Casserole
Posted: Mon Jul 27, 2009 4:39 am
The first time I had this was at my Dad's funeral back in 1983. It's become one of my favorite dishes to date.
- Props to Ida Keel- the woman who passed this on to my Mom who passed it on to me.
Difficulty Level: **
I give it a 2 star because of the number of ingredients and time.
-------------
Original recipe yield:
8 servings
INGREDIENTS
6 skinless, boneless chicken breast halves
2 bags of frozen broccoli with florets
3 (10.75 ounce) cans condensed cream of chicken soup
1 cup mayonnaise
1 teaspoon curry powder
3 tablespoons lemon juice
8 ounces shredded Cheddar cheese
4 slices of white bread- toasted and crumbled
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in tin foil - brush on butter and lemon pepper seasoning to taste. Bake until fully cooked.
Cut cooked chicken to bite size pieces.
Place chicken and broccoli in a lightly greased (cooking spray) 9x13 inch baking dish.
In a medium bowl combine cream of chicken soup, mayonnaise, curry powder and lemon juice.
Pour soup mixture over chicken & broccoli mixture and top with crumbed toast.
Cover with tin foil
Bake at 350 degrees F (175 degrees C) for about 20 minutes.
remove tin foil and add shredded cheese - continue baking until cheese is melted.
EDIT- I should have checked this over before posting. I had to make some tweaks for clarification.
